Chicken Cordon Bleu Sliders

I love Fall! The crisp air, yummy food, football, tailgating, and holiday celebrations! There's something about holiday food. It's usually decadent and reserved for a few days out of the year. But, I've created this slider, which is a play on chicken cordon blue.

This is one of my favorite quick and easy meals to prepare because ham and cheese sandwiches were my favorite sandwich when I was a kid. These are more of a "grown up" ham and cheese with chicken, which is better known as chicken cordon bleu. These bring back a childhood favorite that kids and adult will enjoy. They're even better because they're bite sized. Could it get any better?




Chicken Cordon Bleu Sliders
Ingredients
12 potato rolls or Hawaiian rolls
1 pound chicken breasts, sliced
1/2 pound ham, sliced
1 pound provolone slices
1/2 teaspoon Tony Chachere's seasoning
1/2 teaspoon garlic, minced
1/2 teaspoon pepper
1/8 teaspoon chipotle Tabasco
1 Tablespoon Worcestershire   
1 Tablespoon butter, melted
1 Tablespoon parsley, minced


Directions
Preheat oven to 300* F.

Split rolls in half to make a top and bottom bun. Place the bottom rolls in a 9x13 pan.
Layer 2 slices chicken and 1 slice ham on each roll.  



Top with provolone. Add the top 'bun'. 


Mix parsley, Tabasco, Worcestershire, and garlic with melted butter. Drizzle butter on top of rolls. Toast sandwiches for 10-12 minutes until cheese is melted, and the sandwiches are warm and toasted. Enjoy!


I like pairing these mini sandwiches with hummus and vegetables or baked potato soup.

P.s. This would be a great sandwich to make with Thanksgiving or Christmas leftovers. My family always has a turkey and a ham on Thanksgiving and Christmas. So you could make turkey cordon blue sandwiches. Delicious!

My Jalapeño chicken sliders would also be great. Just substitute turkey for the chicken and enjoy those leftovers!

Jalapeno Chicken Sliders

I love Fall! The crisp air, yummy food, football, and tailgating. There's something about tailgating food. It's usually decadent and reserved for game days. But, I've created a healthier twist on one of my husband's favorite game day foods.

This is my version of jalapeño poppers. Do y'all know what jalapeno poppers are? They are jalapeños stuffed with cream cheese, cheese, and wrapped in bacon.

I turned them into mini sandwiches, which makes the portion smaller. And, I choose lighter ingredients. Are you ready for some sliders?


Jalapeño Chicken Sliders
12 potato rolls or Hawaiian rolls
1/2 teaspoon Tony Chachere's seasoning
1/2 teaspoon garlic
1/2 teaspoon salt
1/2 teaspoon pepper
2 pounds chicken breasts
3 ounces reduced fat cream cheese, softened to room temperature
1 jalapeño, seeded and minced
1/8 teaspoon chipotle Tabasco
3 Tablespoons parsley, minced
1/2 cup 2% shredded mozzarella
1 Tablespoon butter, melted
1 Tablespoon parsley, minced

Preheat oven to 300* F. Season chicken with Tony Chachere, garlic, salt, and black pepper. Bake chicken at 300*F until internal temperature reaching 170*F.

In a large bowl, mix reduced fat cream cheese, jalapeno, chipotle Tabasco,  and 3 Tablespoons of parsley. Set aside.

Split rolls in half to create a top bun and a bottom bun. Place rolls in a 9x13 pan.

Let chicken cool 15-20 minutes. Then, shred. Add chicken to cream cheese mixture. Add chicken mixture to the rolls. Top with mozzarella. Add the top 'bun'. Mix 1 Tablespoon parsley with melted butter. Drizzle butter on top of rolls. Toast sandwiches for 7-10 minutes until the filling is warm and the bread is crisp. Enjoy!


I like pairing these mini sandwiches with hummus and vegetables or soup.

Easy Entertaining: 5 Breakfast Entrees for Entertaining

I love breakfast! I love to eat breakfast foods any time of the day. Breakfast allows you to serve sweet foods, savory foods, or both! I think that makes breakfast especially great for entertaining. Breakfast has an ease about it. It can be very informal but still feel special. Breakfast is approachable.

If I'm eating breakfast at a restaurant, my toughest decision is whether to choose something sweet or something savory. If that's the hardest decision of the day, you know that's a great day! So, I would encourage you to offer something sweet and savory when hosting a breakfast or brunch.

Here are some ideas for a great breakfast options that can be prepared ahead of time.



Quiche or Frittata
These easy entrees only differ by one ingredient. A quiche has a pasty crust with an egg-based filling. A frittata is simply a crust-less quiche. Quiche and frittatas are easy ways to use up leftovers. This frittata features mushrooms, asparagus, and cheese. It is delicious!




French Toast Casserole or Bread Pudding
I was making a French toast casserole recently, and I thought to myself "I'm making bread pudding for  breakfast." Dessert for breakfast; what a meal! I like the idea of a bread pudding because it can be sweet or savory. My RDtip would be to use skim or nonfat milk for the custard for a lighter French toast casserole. This French toast is peach and pecan. Peach is one of my husband's favorite flavors, and I love pecans. What a great marriage of flavors!




Pancakes or Waffles
Make a large batch of pancakes and waffles. Freeze the extra. Frozen pancakes and waffles reheat easily and are ready whenever you need them.



Parfaits with Homemade Granola
I love making homemade granola. It makes the house smell fantastic! I make granola about once a month with old fashioned oats, pecans, almonds, brown sugar, honey, and warming spices. I'll post my recipe soon. Parfaits are like a healthier breakfast sundae. A parfait elevates humble granola, yogurt, and fruit to a fancy layered breakfast treat. Add fresh herbs for a flavorful garnish to further elevate your parfait.




Breakfast Sandwiches
This is a great way to use leftovers from the week. Think about what breads you have leftover: biscuits, wheat bread, rolls, tortillas. Then, fill them with leftover protein: ham, turkey, egg, etc. Add cheese, veggies, and enjoy! Leftovers never tasted so good!

Happy National Sandwich Day: November 3

It's National Sandwich Day! Sandwiches are my go-to, quick lunch. One of my undergraduate professors banned students from using sandwiches in our meal plans. Apparently, all nutrition and dietetic students eat turkey sandwiches for lunch and "prescribe" turkey sandwiches to their imaginary patients for all meal plans! I still love sandwiches and never seem to tire of making them or eating them. Here are some yummy salad and soup recipes to accompany your favorites sandwiches
