Pickled Vegetables Recipe

As a Registered Dietitian, you can work in many areas, including recipe development. I have the wonderful opportunity to work with the National Kidney Foundation (NKF). I've developed recipes for the NKF for more than 4 years. They featured one of my recipes yesterday, and I wanted to share it with you! Click on the link below to view the recipe for pickled Summer vegetables.

Pickling is a great way to preserve food. If you have an abundance of vegetables in your garden, you can consider pickling some to enjoy later in the year. My recipe is a lower sodium spin on pickling. Enjoy!

If you want more recipes, you can access to all these recipes for FREE by signing up for the Kidney Living publication through the NKF or by signing up for FoodCare on the NKF's website.

The recipes below are more samples of my recipes featured in the Winter issue of Kidney Living. This website features recipes for individuals with various stages of kidney disease, diabetes, and their families. Just plug your information into FoodCare, and it will provide feedback on the recipes you select. As always, please consult your doctor and registered dietitian before making dietary changes.

Here are some of the recipes I created for the NKF in the Winter issue of Kidney Living.

RDtipoftheday Favorites: April Edition

Welcome to RDtipoftheday's favorites April edition. This is my blog series that highlights some of the best things I've been watching, reading, listening to, cooking, and eating. These are a few of my favorite things this month.

Reading
I've been loving my new cookbooks. I received several cookbooks as Christmas and birthday gifts (thanks family!). I've also found cookbooks at the library! Can you believe it?!? Here's what I checked out this month.

As the name suggests, the New Cast Iron Skillet Cookbook features recipes made in cast iron pans. It has recipes ranging for sweet to savory. It includes dishes that can be served for breakfast, lunch, dinner, and dessert. As always, I'm excited to try some new recipes and find new ways to cook in my cast iron pan.

One of my 2016 resolutions is to read more. This month, I've read Unglued by Lysa Terkeurst and the cookbook mentioned above. Unglued is a nonfiction book about how people react to situations. I love this book for anyone that want to improve interpersonal skills and better handling different reactions. This book can be used for personal application, work or professional applications, and is great for relating to patients and their families. It teaches you about the different ways individuals react to emotions and how you can respond in a healthy way. I think it is a great read for everyone.

Cooking
I'm working on more recipes for the National Kidney Foundation (NKF), so I've been cooking and baking quite a bit. Stay tuned for those recipes.

I recently read Julia Child's memoir and enjoyed learning more about her life. This link popped up the other day on social media, and I thought I would share it with you. Here are five things we can learn from Julia Child's Kitchen.

Listening

I have been listening to a new-to-me podcast. It's called The Happy Hour with Jamie Ivey. I have been listening to about 1-2 episodes per week to catch up. I usually listen on my commute or while cleaning house. I've started at the beginning, and I'm on episode 70ish. I'm loving it! Check it out. It's free. She posts one episode per week, but sometime weeks there are bonus episodes!

The newest podcast I've found is That Sounds Fun with Annie F. Downs. She is fun and funny, she has 10 podcast episodes. She is an author, blogger, and speaker. She talks a lot about writing in the podcasts I've listened to because of her recently published books. Her books are on my list to read. I'll let you know what I think in my future favorites!

I hope you enjoyed these tips, recipes, and all of my favorites. Let me know if this is a feature that you would like me to continue by commenting below. And, let me know if you have something you want to be featured. Thanks! Have a great weekend!

Chicken Marsala for Your Valentine

It's almost Valentine's Day. This is a great day set aside to show your loved ones that they are loved. How do you show someone you love them? I'm not a talented artist or musician. I can't paint a picture or create a love song. But, I can cook.

As a registered dietitian (RD), I have the opportunity to develop and analyze recipes for the National Kidney Foundation (NKF) for more than 4 years. I'm sharing one of the recipes that I created for the NKF today.

This is my Chicken Marsala recipe. This recipe is a perfect combination of al dente orzo, juicy chicken with thyme, and mushrooms that soak up a velvety, Marsala wine sauce. It is a perfectly romantic meal for you and your loved one on Valentine's Day. It is so good; it's worth making for your special someone to show them how special they are to you.

Recipes for Winter and a Super Souper Bowl

Registered dietitians (RD) can work in a variety of fields. I have been a clinical dietitian for over 8 years. I've taught collegiate nutrition courses for over 3 years. I also have the opportunity to develop recipes for the National Kidney Foundation (NKF) for more than 4 years. You can have access to all the recipes for FREE by signing up for the Kidney Living publication through the NKF or signing up for FoodCare on the NKF's website.

The recipes in the Winter issue are great for keeping things warm and spicy. They are perfect for the cold, winter weather. And, there are a ton of great soup recipes, which are great for the "Souper Bowl" for anyone that loves puns!

Here are some of the recipes I created for the NKF in this issue of Kidney Living.
