State of My Goals Address: January

As promised in previous posts, I am sharing updates on my goals. You can take a look at my 2016 goals and my thoughts on goals and resolutionsSharing these goals is a way to keep me accountable and help me to improve, grow, and learn. People who share their goals tend to be more successful. So, I'm sharing the goals here to encourage you and to keep me accountable. And, I'll share progress over the year. 

Sharing my goals is also meant to encourage you to evaluate if you want to set goals. Evaluate what you want to accomplish this year. You are welcome to comment with your goals and share your progress as well. Feel free to tag your goals with #RDTODgoals or #healthyRD on social media.


2016 Goals
1) Try 30 new recipes. 
In January, I tried a few new recipes including:


  • Gumbo yaya


  • Biscuits (tried this twice - once on a baking sheet and once in my cast iron skillet)

  • Salted caramel skillet brownies

  • Skillet cornbread




  • Lemon cookies


2) Read more.
I'm in a study at church. We are going through Galatians, so I've been reading and studying more through the study. I also purchased a few books to read on vacation this year.


3) Build endurance and strength.
I continue to attend my favorite strength-training class. I love the instructor. She challenges and encourages us to lift weights, albeit-light weights, for an hour. She checks our form and encourages us to push ourselves and grow.

I also made a workout playlist to encourage me to do more cardio. I love listening to music, and I save this playlist only for workouts. Its a good incentive for me to workout and helps me keep track of time.

4) Travel.
I did not travel in January, but I do have a couple trips in the works for this year. Stay tuned.

5) Learn something new.
This month I learned to make a few new recipes (see goal #1). I also learned about using and caring for cast iron pans. Look for a post about what I've learned about cast iron pans.

These are my broad goals for 2016. They have more specific meanings to me. SMART goals are important when you are making changes, but that doesn't diminish the value of broad goals. What goals are you working on in 2016? Comment below.

Valentine's Day:
Did you forget to make Valentine's Day reservations? Or, do you not want to fight the crowds? Don't worry. Just make my chicken marsala recipe for a delicious, romantic way to say I love you to your special someone or make it for yourself. You deserve a delicious meal!


Does your sweetie have a sweet tooth? Does your honey crave honey? Do you have sweeth teeth instead of just a sweet tooth? If so, try out my quick and easy Valentine dessert bar. There's a little something gooey and extra chocolately, something sweet and spicy, and something sweet and salty. Basically, there's something for everyone you love.

I love these mini rose pies for your Valentine's Day celebration; so cute!



Mardi Gras and the Lenten Season:
Being from Louisiana, I look forward to Mardi Gras and the Lenten Season. If you can't find a bakery making King cake, don't worry. Make my easy King Cake recipe and celebrate all season.

Chicken Marsala for Your Valentine

It's almost Valentine's Day. This is a great day set aside to show your loved ones that they are loved. How do you show someone you love them? I'm not a talented artist or musician. I can't paint a picture or create a love song. But, I can cook. 

As a registered dietitian (RD), I have the opportunity to develop and analyze recipes for the National Kidney Foundation (NKF) for more than 4 years. I'm sharing one of the recipes that I created for the NKF today.

This is my Chicken Marsala recipe. This recipe is a perfect combination of al dente orzo, juicy chicken with thyme, and mushrooms that soak up a velvety, Marsala wine sauce. It is a perfectly romantic meal for you and your loved one on Valentine's Day. It is so good; it's worth making for your special someone to show them how special they are to you.

Recipes for Winter and a Super Souper Bowl

Registered dietitians (RD) can work in a variety of fields. I have been a clinical dietitian for over 8 years. I've taught collegiate nutrition courses for over 3 years. I also have the opportunity to develop recipes for the National Kidney Foundation (NKF) for more than 4 years. You can have access to all the recipes for FREE by signing up for the Kidney Living publication through the NKF or signing up for FoodCare on the NKF's website.


The recipes in the Winter issue are great for keeping things warm and spicy. They are perfect for the cold, winter weather. And, there are a ton of great soup recipes, which are great for the "Souper Bowl" for anyone that loves puns!
